1. Make the Crust (Keep It Light)

This is simply the recipe from the Crisco can — and there’s a reason it’s stood the test of time. This makes one crust, and for apple pie you’ll need two. I always make them separately instead of doubling because pie dough fails when it becomes tough instead of tender and flaky. That usually happens from overworking it. So take a breath. Be gentle.

Single Crust Ingredients
You’ll adjust these ingredients over time due to weather, temperature, humidity in your particular area.

  • 1⅓ cups flour

  • ½ teaspoon salt

  • ½ cup Crisco

  • 5 tablespoons cold water

How to do it:

  • Mix the flour and salt

  • Cut in the Crisco using a fork or pastry cutter until it looks like little peas

  • Add cold water and mix lightly

  • Do not knead aggressively

  • Roll gently and stop when it comes together

Light hands = flaky crust.


2. Build the Bottom Crust

  • Roll out one crust

  • Place it into your pie plate

  • Set aside while you make the filling

Apple Filling Ingredients:

  • ½ cup sugar

  • ¼ cup firmly packed brown sugar

  • ¼ cup flour

This is the secret.

Pour ½ to 1 cup of whipping cream directly into the slits in the crust.

You can return the pie to the oven briefly to warm the cream, but I usually don’t. It sinks into the apples and creates a richness that people can’t quite identify, they just know it’s incredible.    This pie is amazing.

After pouring some cream into the pie, whip the rest for topping, or try it warm with ice cream. In my opinion, warm apple pie + ice cream is about as good as dessert gets.
